Gardens

Few things make me happier than getting this in the mail.


My absolute favorite magazine.  I'm trying to resist reading it until tomorrow because I have the evening to myself and I think a cup of tea and this magazine will be the perfect evening.  But...I may peek at it tonight, I can hardly wait :)
 
Something else I'm loving right now?...our vegetable gardens.  I'm fortunate because Adam really likes gardening so he takes care of our vegetable gardens.  In the past we've grown an array of vegetables but this year we decided to only grow things we would actually eat.  Adam built us raised gardens last year and this year added under ground tubing to be able to water the plants from underneath.

On the far fence is Garden #1 to the left of the patio is Garden #2 and to the right of the patio is Garden #3

Asparagus (from my dad's garden)

These are our first fruits!!! so exciting.

Garden #1
My lovely gardener with the peas.
Trellis made of PVC pipe and string. 
The smaller tube is where we can water them and it goes underneath the plant.  Adam read that if you water from below it encourages the roots to go lower.
 Pay no attention to the side of the yard with the overgrown weeds...

 Yes we devoted an entire garden to peas.
The other night we picked 43 pods and got less than a cup of peas.

Again pay no attention to the weeds.  I have plans for blocks underneath so no weeds can grow.
 

A new addition this year is hanging Marigolds. 
We're hoping they keep the mosquitos away, because they are terrible.
 
We are truly ready to start harvesting our garden...it's not quite time.
Until then we still have to buy our lettuce and tomatoes from the store. 
Last night we did just that for our favorite Chicken Tacos. 
His bowl

This is how not to pit an avocado. 
 
When we make chicken tacos we always use our own seasoning.  I found this recipe online a couple of years ago, so I apologize if you read this and it's yours.  If it is let me know and I'll give you credit.
 
Taco Seasoning
4TBS Chili Powder
3TBS + 1 tsp paprika
3TBS cumin
1 TBS + 2 tsp onion powder
1 tsp garlic powder
1/4 tsp cayenne powder
 
Whisk together
Use 2 TBS of mix and 3/4 cup water to 1 pound of meat.
 
I buy the spices in bulk and made a bunch up ahead of time.  Our secret is a to buy a rotisserie chicken from the grocery story and shred in in the Kitchen Maid, and a little seasoning and hit up in the skillet.  Super easy and healthy.
